Dump and Bake Kielbasa, Broccoli and Tortellini

This dump and bake kielbasa, broccoli, and tortellini roasts everything together in one pan with olive oil, garlic, and broth then finishes with Parmesan for an easy weeknight dinner ready in 30 minutes.

Ingredients
  

  • 1 package cheese tortellini 18 oz
  • 12 oz broccoli florets
  • 12 oz beef kielbasa sliced into bite-sized pieces
  • 1/2 cup chicken or beef broth
  • 1/4 cup olive oil divided
  • 1/2 tbsp minced garlic
  • 1/3 cup Parmesan cheese grated
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 350°F.
  2. Add the broccoli to a large bowl. Drizzle with half the olive oil, season with salt and pepper, and toss to coat. Spread into a 9x13-inch baking dish and roast for 10 minutes.
  3. While the broccoli roasts slice the kielbasa into bite-sized pieces. Add the kielbasa and tortellini to the same bowl. Add the minced garlic and remaining olive oil and toss until everything is well coated.
  4. Remove the baking dish from the oven. Add the kielbasa and tortellini mixture to the dish with the broccoli. Pour the broth evenly over everything.
  5. Cover tightly with foil and bake for 20 minutes until the tortellini is tender and everything is heated through.
  6. Remove from the oven and top with grated Parmesan. Serve warm.

Notes

  • Roasting the broccoli for 10 minutes before everything else goes in gives it a head start so it comes out tender and slightly caramelized rather than raw and crunchy in the finished dish.
  • Use the same bowl for both the broccoli and the kielbasa and tortellini mixture. Less cleanup and the residual olive oil and seasoning in the bowl adds extra flavor to the second toss.
  • Make sure the foil is sealed tightly before the second bake. The steam trapped inside is what cooks the tortellini through and keeps everything from drying out.
  • Chicken broth produces a lighter result. Beef broth adds a deeper, slightly richer flavor that pairs especially well with the kielbasa.
