Nothing beats a busy night when dinner is already done. These three bakes all come together the same easy way. Brown some meat, boil your pasta or tortillas, layer everything in a dish, and freeze. When you’re ready to eat, just thaw, bake, and you’ve got a hot, home cooked dinner with little effort.
This roundup covers three of our go-to freezer dinners: a cheesy Freezer Beef Ravioli Bake, creamy Freezer Chicken Enchiladas, and a family-favorite Freezer Taco Pasta. Pick one to try, or make all three in an afternoon and set yourself up with a stocked freezer.
Taco Pasta

Method
- Brown the ground beef and boil the pasta.
- Add the taco seasoning to the beef.
- Layer the pasta, beef, cheese, and salsa in a baking dish. Mix it around a bit, but save some cheese to topit off.
- Add 1/2 cup beef broth to help get the remaining salsa out of the jar and moisten the bake.
- Bake covered for 30 minutes at 375°F if serving immediately, otherwise follow the freezer tip!
- Serve with sour cream and more shredded cheese if desired!
Beef Ravioli Bake

Method
- Brown the ground beef and season with Italian seasoning
- Boil the ravioli
- Combine the beef, spaghetti sauce, and cream cheese
- Layer the sauce mixture, ravioli, and mozzarella in a baking dish, however you like
- To freeze: cover with plastic wrap first, then foil on top
- To bake: remove the plastic wrap (keep the foil on), thaw if frozen, and bake covered at 375°F for 30-45minutes, until heated through
Easy Chicken Enchiladas

Method
- Cook the chicken (a crock pot works great), season with salt, pepper, onion and garlic powder, then shred it
- Mix the shredded chicken with 1 cup sour cream, 1 cup cheese, and 1/2 can of enchilada sauce
- Stuff the tortillas with the chicken mixture and roll them up
- Place the rolled tortillas with the remaining can of enchilada sauce and more cheese in the baking pan
- If serving immediately, bake covered for 20-25 minutes at 375°F
Freezer Meal Tip: I cover all my freezer meals with plastic wrap first, then foil on top. Remove the plastic wrap before baking, but keep the foil on. I set mine out in the morning to thaw, then bake covered for 30–45 minutes at 375°F — since everything is already cooked, you’re just warming it through.
